To review

Create a sophisticated sampling for a cheese plate, featuring three types of cheeses made from different milk: cow, sheep and goat. Vary the textures as well: hard, creamy and semisoft.

A Bordeaux blend, with its depth and structure, goes well with braised meat like slow-braised short rib, or seared lamb.

Add surprising flavor by infusing chocolate into a savory dish. Use cocoa nibs with salmon or very dark chocolate to thicken and add a hint of chocolate flavor to a sauce.
