Inspired by the colorful charm, tropical ingredients and sights and sounds of Puerto Rico, Chef Eric Ripert and designer
Matthew Patrick Smyth create a dinner, and a setting, that brings the feel of the island back home.
Sauteed Snapper with Sofrito Coconut Emulsion
Frequent trips to Puerto Rico, where he grew to love the island culture, inspired Eric to celebrate its rich Spanish and African-influenced culinary heritage and bountiful ingredients with this vibrant snapper recipe.
A sofrito and fish fumet form the base of the sauce, which includes
tropical accents like coconut milk and lime.
“What triggers creativity for me are experiences. I store tiny bits of information from the location, the season, the
produce, memories and stories, music. All those ideas came together to give me an idea of something related
to the recipe. For the snapper, I’ve combined traditional ingredients with my own memories of Puerto Rico.”

shaped by memories of the city—and their favorite details.
Pan Braised Poussin with Baby Leeks and Cous Cous
Inspired by Marseille’s multi-cultural heritage and his own childhood in the South of
France—when sometimes no actual fish were caught during family fishing trips—Eric
created a twist on a traditional bouillabaisse.
Rather than the typical fish and shellfish, he adds poussin and serves it with cous cous, a
nod to the North-African influence.
“You come back from travel with the experience of where you’ve been. I do a lot of traveling to find details.
Everywhere I go, I look. Marseilles, for me, is about the colors. Saffron, cinnamon, the spices you see laying
in mounds in the market; it’s very vibrant.”

Eric Ripert is the chef and co-owner of the celebrated New York restaurant Le Bernardin,
which holds three Michelin stars. He’s host of his own award-winning series Avec Eric and
is a regular guest judge on Bravo’s Top Chef. A recipient of the Legion d’Honneur, France’s
highest honor, he’s also written several cookbooks.
Matthew Patrick Smyth
Matthew Patrick Smyth is an award-winning designer known for his distinctive mix of details,
styles and periods. Based in New York, he also lives in Paris and travels extensively, finding
inspiration everywhere he goes. He specializes in residential design, has created fabric,
wallpaper and carpet lines and has written a book.
